Valentine's Dinner
1 pkg sirloin tip steak {its the kind that is boneless and very thinly sliced}
[it also tends to be called different things depending on where you shop]
the importance is to have it be thin.

1 bundle of asparagus. thin stalks are preferred. If they are thicker I will only want to do 1 of each in what
I am making and it will take away from the appeal of it.

1 small bag yukon gold potatoes
1 pkg bacon crumbles or pkg of bacon. I can work with either one. They are being added to jazz up the potatoes
1 sm pkg shredded cheddar or monterey jack cheese. A blend would be fine as well.

1 sm container heavy whipping cream
1 sm container of beef broth or stock

1 pkg mushrooms

1 clove of garlic or small container of minced garlic

1 stick butter
small amt of olive oil


Steak & Asparagus Roll Ups

Begin water boiling for potatoes before cooking steak, cut potatoes into chunks and drop into boiling water
Boil until tender {about 15 mins}

Trim Asparagus to desired lengths, I have a trick I will show on air about this...

take one package of thinly sliced tip steak,
taking time to trim off any fat,
then cut the steak into long rectangular pieces that are suitable for rolling up for cooking.

Sprinkle a very light coat of olive oil onto the steak and season as desired.
My personal favorites include salt and pepper, natures seasons and a garlic and herb blend

Place asparagus at the top of steak slice using more of the end as a starting point.
Begin rolling steak around asparagus, you want to not overlap the steak but make it a twisty kind of shape going down.
If the steak were to overlap it would have a harder time cooking.

Place steak roll ups in a hot pan on med-high heat with olive oil sprinkled in bottom.
You are doing a very quick sear on these, not attempting to cook them through
you will sear all sides with a nice golden color, then transfer to baking dish.

Turn heat off on pan but keep held to side, you want it later for the sauce.

While steak is baking you can pay attention to those potatoes. Drain potatoes of all water and place into large bowl of mixer or large mixing bowl. Turn mixer on med speed and allow potatoes to begin to mash
As they do add a small amount of heavy cream, just enough to make them creamy. Then add bacon crumbles and cheese, after potatoes are a smooth consistency they are done.

Begin to saute mushrooms in same pan steak cooked in, using about 1 teaspoon or so of butter to soften them and give them flavor, add 1 tsp of garlic, after mushrooms are completely cook you want to check your steak. If its nearly done you now want to quickly finish off the sauce. If not turn heat to very low and wait until they are closer to being done.

Assuming the steak is done, now after mushrooms and garlic are added, add beef broth or stock. You will want to eyeball, adding
enough to make a sauce but not so much that it will go wasted. As you add this, use a wooden spoon or whisk to be gathering  up all those steak bits from the bottom of pan, this will flavor the sauce greatly. then add heavy cream, again just a small amount, probably a few tablespoons worth. Then saute this sauce on med heat until its thickened, not too much just enough because if you cook this for too long the butter in the mushrooms will start to separate, etc.

Now plate this meal.

Add a scoop or so of potatoes to a plate, top with steak rolls {about 3 or so per person} and then top with mushroom sauce.

And you're done.

This meal sounds mighty complicated on paper because I am just one of those descriptive people but its actually super simple to make and great even for those on a budget. The entire meal could be made for around $15 assuming that a person has basic spices in their home and olive oil, the main ingredients are very inexpensive.
